Description

To make Brown Sugar Boba, tapioca pearls are cooked in a large volume of boiling water until tender according to package instructions, then rinsed to remove excess starch. The pearls are simmered with brown sugar on low heat until the mixture thickens into a syrup that coats the boba evenly, giving a deep caramel flavor and sticky texture.

A strong black tea is brewed using one or two tea bags steeped in hot water for about five minutes and then cooled. To assemble the milk tea, brewed tea is combined with brown sugar-coated tapioca pearls and milk, poured over ice cubes to chill. The result is a drink balancing creaminess from the milk, sweetness from the brown sugar syrup, robustness from the black tea, and the chewy bite of the tapioca pearls.

Ingredients

Brown sugar boba with brown sugar syrup

  • 1/4 cup tapioca pearls already mixed with brown sugar, cooked
  • 3/4 cup brown sugar
  • water as needed

tea base

  • 1 black tea bag or 2 if you want a stronger flavor
  • 200 ml water hot, boiling

Assemble

  • 1 cup milk whole
  • ice cubes

Instructions

Cook the boba pearls

  1. Bring 8 times of water to a boiling and then place tapioca pearls. Read the instruction on the package (find the required time). It may be 20 minutes or 5 minutes. Cover the lid, turn off the fire and let it rest for another required time.
  2. Rinse the boba pearls under running water. Then mix the boba pearls with brown sugar.
  3. Add around ¾ cup of brown sugar in a pot, then place the boba pearls in. No need to add water. Slow down the fire and stir from time to time to avoid being sticky.
  4. Cook for 3-4 minutes until there are large bubbles and a thick brown syrup is formed. Now our brown sugar boba pearls are ready for all types of bubble tea, milk tea, latte, or even as toppings for desserts.

Brew the tea base

  1. Add 200ml hot water to 1 black tea bag in a small cup. Let it steep for 5 minutes. Remove the tea bag and set the liquid aside to cool down.
  2. add 2 or 3 tablespoons of cooked tapioca pearls along with the brown sugar syrup in a serving cup, then fill the cup with ice cubes.
  3. Add the tea liquid and milk. Pour in black tea first and then the milk. Stir well before enjoying.
