Brown Sugar Frosting

Brown Sugar Frosting is a creamy, whipped topping made by cooking a flour and milk mixture into a thick paste, then combining it with creamed butter, brown sugar, vanilla, and salt. The final texture is light and fluffy, with a caramel-like flavor from the brown sugar, ideal for cakes or cupcakes.

Description

This frosting begins by gently cooking all-purpose flour into milk until the mixture thickens into a dense, paste-like cream. After cooling to room temperature, vanilla extract is added. Separately, salted butter is creamed with packed brown sugar and a pinch of salt until light and smooth, ensuring the sugar dissolves thoroughly. Incorporating the cooled milk-flour mixture into the butter mixture and beating at high speed develops a fluffy consistency reminiscent of whipped cream.

The use of real butter and pure vanilla extract enhances flavor, while correct butter temperature—cool room temperature—is critical to achieving the proper texture. The finished frosting has a rich brown sugar taste with smoothness and stability suitable for decorating.

Longer mixing times help prevent gritty texture by dissolving sugar completely and aerating the mixture. This frosting pairs well with various cake flavors and adds a moist, sweet finish.

Ingredients

Servings
  • 7 tablespoons all-purpose flour
  • 1 ¼ cups milk
  • 1 ½ tablespoons vanilla extract pure
  • 1 ½ cups butter at cool room temperature, salted
  • 1 ½ cups brown sugar packed
  • salt pinch

Instructions

  1. In a small saucepan, whisk flour into milk and heat, stirring constantly, until it thickens. It will be the consistency of a thick paste.
  2. Remove from heat and let it cool to room temperature.
  3. Stir in vanilla.
  4. While the mixture is cooling, cream the butter, sugar, and salt together until light and fluffy on medium high, about 3 minutes.
  5. Then add the completely cooled milk mixture.
  6. Beat it for about 5 minutes on medium-high to high until it looks like whipped cream. If you can still taste the sugar granules, keep beating it until you can’t.

Notes

  • Use butter at cool room temperature—soft but not melting—for best creaming results.
  • The milk and flour mixture should be thick like a paste, not runny, to achieve proper frosting texture.
  • Beating the frosting with a stand mixer or on high speed ensures a smooth, light consistency.
  • Do not shorten mixing times to avoid gritty texture; fully incorporate sugar and air for ideal fluffiness.
  • Choose real butter and pure vanilla extract for authentic flavor.
