Brownie Batter Dip
Description
This dessert dip starts by heating brownie mix briefly in the microwave to partially cook and cool. Cream cheese is beaten with vanilla until creamy, then whipped topping is gently mixed in for lightness. The cooled brownie mix is folded in to combine the deep chocolate batter flavor with the creamy base. Mini chocolate chips add textural contrast and concentration of chocolate taste.
The dip has a smooth, creamy consistency with pockets of soft sweetness from the brownie mix and chocolate burst from the chips. No baking is required beyond heating the mix, so it's quick to prepare yet offers a rich, indulgent flavor similar to raw brownie batter. Chilling the dip for a couple of hours firms it for easy dipping.
Serve with graham crackers, fruit, pretzels, or other snack items for dipping. The dip is versatile for parties or casual treats. Variations include using different brownie mixes or adding espresso powder for complexity. It is best served chilled and can be refrigerated for later use.
Ingredients
- 20 ounce brownie mix I used Ghirardelli, package
- 8 ounce cream cheese softened, block
- 2 teaspoons vanilla extract
- 8 ounce whipped topping thawed, tub
- ⅓ cup mini chocolate chips plus extra for sprinkling
Instructions
- In a large microwave safe mixing bowl add the brownie mix and microwave for 2 minutes stopping at 30 second intervals to mix thoroughly. Set aside to cool.
- In the bowl of a stand mixer fitted with a paddle attachment, beat the cream cheese with the vanilla extract until smooth and creamy, about 3 minutes. Scrape the bowl with a rubber spatula.
- Add in the cool whip and mix until just combined, scraping the bowl once to make sure it is all evenly combined.
- Add in the brownie mix, and fold in until well blended.
- Fold in the chocolate chips and remove to a serving container.
- Chill for 2 hours before serving.
- Sprinkle with additional chocolate chips just before serving, if desired.
Notes
- You may use any preferred brownie mix; Ghirardelli is recommended here.
- Regular or reduced-fat cream cheese works well, but fat-free cream cheese is not recommended due to texture issues.
- Substitute whipped topping with Tru Whip or whipped heavy cream (about 1½ cups) if preferred; note heavy cream will reduce sweetness.
- Add 1 teaspoon instant espresso powder with vanilla for a deeper chocolate flavor.
- A serving size is approximately 1/4 cup.
