Brownie Cookies

Report
Brownie Cookies combine boxed brownie mix with flour, eggs, and oil, then are rolled in powdered sugar before baking. The resulting cookies have a thick, fudgy texture reminiscent of brownies with a powdered sugar-coated exterior adding a touch of sweetness and a slightly crisp outer layer.

Description

Brownie Cookies start by blending a boxed brownie mix with additional flour, eggs, and vegetable oil to form a thick dough. The dense batter is scooped into cookies, rolled in powdered sugar, and baked at 350°F until set but still fudgy inside. Cooling first on the baking sheet helps them firm up before transferring to a wire rack.

The texture is rich and chocolatey like brownies, with a soft center surrounded by a delicate powdered sugar crust. These cookies offer a convenient way to enjoy brownie flavors in a portable form suitable for snacks or dessert. Baking times are short to preserve moisture and avoid dryness.

Storing the cookies with a piece of bread in an airtight container helps maintain moisture and freshness up to one to two weeks at room temperature.

Ingredients

Servings
  • 1 box brownie mix (18 oz)
  • 1 cup flour
  • 3 egg
  • 1/3 cup vegetable oil
  • 1/2 cup powdered sugar (for rolling cookies in)

Instructions

  3. Scoop out the cookie dough with a cookie scoop and roll the cookie dough in powdered sugar.
  4. Set cookies 2-inches apart on an ungreased cookie sheet. Bake for 8-10 minutes until the cookies are set.
  5. Remove the cookies and cool on the cookie sheet for 5 minutes.
  6. Then move to a wire rack to cool completely.

Notes

  • Store the cookies in an airtight container at room temperature for 1 to 2 weeks to keep them fresh.
  • Place a piece of bread inside the container with the cookies to help maintain moisture and prevent them from drying out.
