Description
Brownie Cookies use a boxed brownie mix combined with a bit of additional flour, eggs, melted butter, and water to create a thick, scoopable dough. Into this dough, chocolate chips and M&M’s candy pieces fold in evenly, adding textural contrast and bursts of candy flavor.
The dough is portioned into tablespoon-sized balls spaced on a parchment-lined baking sheet then baked at 375°F for 10 to 12 minutes. They are finished by pressing extra M&M’s candy on top as soon as they come out of the oven to add color and candy texture before cooling briefly on the baking sheet and then moving to a wire rack.
The cookies have a fudgy center reminiscent of brownies and a slight chewiness with a candy crunch. This makes them a convenient, hand-held chocolate treat with familiar brownie taste enhanced by the candies.
Variations are easy using seasonal colored M&M’s for holidays or swapping the chocolate chips for caramel chips or Reese’s Pieces. These adaptations add playful color and flavor shifts.
Ingredients
- 1 box brownie mix 18.9 oz size
- ¼ Cup all-purpose flour
- 2 large egg large
- ¼ Cup butter melted
- 1 tablespoon water
- 1 Cup M&M’s candy
- ½ Cup chocolate chips
Instructions
- Preheat oven to 375° F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the dry brownie mix and flour.
- Add in eggs, melted butter and water and mix until blended. (The dough will be thick)
- Gently stir in the M&M’s and chocolate chips.
- Scoop 1 tablespoon size amount of dough and roll into a ball and place 2 inches apart on prepared baking sheet
- Bake 10-12 minutes.
- Remove from oven and immediately press extra M&M’s into the tops of each cookie.
- Allow to cool on the baking sheet for 2-3 minutes, then transfer to a wire cooling rack.
Notes
- Use gluten-free flour as a substitute if needed for dietary restrictions.
- Seasonal colored M&M’s are a fun way to customize cookies for holidays such as Easter, Halloween, Christmas, Memorial Day, and the 4th of July.
- Mini or regular chocolate chips may be used depending on preference.
- For variation, substitute chocolate chips with Reese’s Pieces or caramel chips to change the flavor profile.
