Brownie Cookies

These Brownie Cookies combine a rich melted chocolate base with cocoa powder and flour to create a fudgy, chewy cookie with brownie-like texture. Mini chocolate chips folded in add bursts of chocolate throughout. The dough is chilled before baking to maintain shape and intensify the chocolate flavor.

Description

The recipe starts by melting semisweet or dark chocolate with unsalted butter, forming the base for these brownie cookies. The wet ingredients, including sugars, eggs, vanilla, and salt, are beaten until light and fluffy, then the melted chocolate is incorporated. Dry ingredients of flour, natural cocoa powder, and baking powder are sifted and folded into the mixture along with chocolate chips for texture and added chocolate taste.

Chilling the dough helps manage spreading during baking, resulting in cookies with soft centers and slightly crisp edges. Baking at 350°F develops a deep chocolate flavor and fudgy consistency reminiscent of brownies but with the convenience of a cookie shape. These cookies keep in an airtight container at room temperature for several days.

The recipe notes an update for a richer, fudgier outcome while preserving the original version for fans. These cookies make an indulgent treat suitable for dessert or snacking.

Ingredients

Servings
  • 8 oz semisweet chocolate bars chopped, or dark chocolate bars
  • ¼ cup butter cut into pieces, unsalted
  • cup granulated sugar
  • cup light brown sugar firmly packed
  • 2 egg room temperature, large
  • 1 teaspoon vanilla extract
  • ¼ teaspoon table salt
  • cup all-purpose flour
  • ¼ cup cocoa powder natural
  • ¼ teaspoon baking powder
  • ½ cup mini chocolate chips

Instructions

  1. Combine chopped chocolate and butter in a medium-sized microwave-safe bowl and heat in 25-second intervals, stirring in between, until completely melted (alternatively, melt chocolate and butter over a double boiler). Set aside.
  2. In a separate, large mixing bowl, combine sugars, eggs, vanilla extract, and salt. Use an electric mixer to stir until combined. Gradually increase mixer speed to high and beat on high speed until thickened, increased in volume, and lightened in color (a minimum of 2-3 minutes on high speed).
  3. Drizzle chocolate into the egg mixture and stir until completely combined.
  4. Sift flour, cocoa powder, and baking powder into the batter and use a spatula to fold together until completely combined.
  5. Stir in chocolate chips.
  6. Cover bowl with plastic wrap and chill for 20-30 minutes. Meanwhile, preheat oven to 350F (175C) and line baking sheets with parchment paper.
  7. Once dough has chilled and oven is preheated, scoop dough into 2-Tablespoon sized balls and roll briefly between your palms to form a smooth ball. Space cookies at least 2” (5cm) apart on baking sheets.
  8. Bake in center rack of 350F (175C) oven for 10 minutes. Remove from oven and allow to cool completely on baking sheet before removing and enjoying.

Notes

  • Store brownie cookies in an airtight container at room temperature for up to 5 days to maintain freshness.
  • This recipe was updated to enhance richness and fudginess; the original version is also available if preferred.
