Brownie Sundae Cookies

Brownie Sundae Cookies combine a rich cocoa-flavored meringue base studded with chocolate chips, baked into firm yet tender cookies. After baking in mason jar lids, they are topped with a scoop of vanilla ice cream, chocolate sauce, and a cherry to create an individual sundae experience. The cookies provide a chewy texture with the sweetness of powdered sugar balanced by the chocolate and vanilla ice cream.

Description

The Brownie Sundae Cookies recipe blends beaten egg whites with cocoa powder, powdered sugar, and chocolate chips to create a meringue-like cookie. The stiff peaks of egg whites give the cookies a light yet structured texture, while folding in cocoa and chocolate chips adds chocolate intensity. Baking them in wide-mouth mason jar lids gives each cookie an individual shape and crisp edges.

Once baked, the cookies are topped with scoops of vanilla ice cream, a drizzle of chocolate sauce, and a cherry, mimicking a classic sundae presentation. This combination brings warmth and crispness from the cookie alongside the cold, creamy ice cream and sweet sauce, balancing textures and temperatures well.

These cookies make a playful dessert served on trays with individual portions, ideal for gatherings or individual treat moments. Preparing the meringue and baking in batches yield delicate, cocoa-rich cookies that pair well with the classic sundae toppings.
