Description

  • 1 baguette French Bread
  • 2 pounds tomatoes ripe
  • ½ teaspoon salt
  • ½ cup basil chopped, fresh
  • 5 Tablespoons extra-virgin olive oil divided
  • balsamic glaze

Instructions

  1. Preheat the oven to 450 degrees F and line a baking sheet with parchment paper.
  2. Slice the baguette on the diagonal into 24 slices that are approximately ½ inch thick.  Place them on the baking sheet and brush the tops with 3 tablespoons of the olive oil. Bake for 4-6 minutes until browned.
  3. Dice the tomatoes into small pieces and place them in a medium mixing bowl.  Stir in the salt, fresh basil and remaining olive oil. Toss until combined.  Drain off any excess liquid from the tomatoes.
  4. Top each piece of bread with the tomato mixture. Drizzle the balsamic glaze. Serve immediately and enjoy!

Notes

  • The tomato topping can be prepared one or two days in advance and stored refrigerated, covered.
  • Drain any excess liquid from the tomato mixture before assembly to prevent soggy bread.
