Bruschetta Recipe

Bruschetta features toasted slices of bread rubbed with garlic and drizzled with olive oil, topped with a fresh mix of diced tomatoes, red onion, and thinly sliced basil. The topping is lightly seasoned with salt and pepper, and some versions include a balsamic glaze. The grilled or oven-toasted bread provides a crunchy base contrasted by the juicy, herbaceous tomato mixture, making it a fresh and textured appetizer or snack.

Description

Bruschetta Recipe presents a crunchy bread base made by grilling or oven-toasting slices of ciabatta, sourdough, or baguette. Each slice is rubbed with the tip of a garlic clove and drizzled with olive oil to infuse subtle garlic flavor and richness. The topping is a finely diced blend of Roma or cherry tomatoes, red onion, and fresh basil leaves, seasoned with kosher salt and black pepper to enhance the natural sweetness and aroma. Optionally, balsamic glaze adds a touch of sweetness and acidity when drizzled on top just before serving.

The combination of the crispy bread and the fresh tomato-basil topping creates a balance of textures and refreshing flavors. Grilling the bread imparts slight charred notes, complementing the brightness of the fresh vegetables. This makes a versatile appetizer or light snack, especially suitable for gatherings or as a summer starter.

This bruschetta can be served immediately after assembling or prepared ahead by toasting the bread in advance and adding the topping close to serving time. Cheese variations include spreading ricotta, sprinkling freshly grated Parmesan, or crumbling feta into the tomato mixture, adding different creamy or salty accents.

  • 3 tablespoons olive oil
  • 1 clove garlic peeled and the tip snipped off
  • 1 1/2 /2 pounds tomato Roma tomatoes or cherry tomatoes
  • 1/4 /4 cup red onion diced into a small diced
  • 6-8 large basil fresh, thinly sliced, leaves
  • kosher salt to taste
  • black pepper to taste
  • balsamic glaze optional

Instructions

  1. Grill the bruschetta. Drizzle olive oil onto a grill pan over medium heat. Place bread slices onto grill pan and drizzle tops with additional olive oil. Cut the tip off the garlic clove and rub it onto the top side of the bread slice. Grill bread until lightly toasted, flipping to grill the other side, about 3 minutes per side. Remove from the grill to a serving platter.
  2. Make the topping. Stir together diced tomatoes, diced onion, and thinly sliced basil leaves. Drain away an excess liquid. Add salt and pepper to taste.
  3. Assemble and serve. Spoon the topping on the toast when ready to serve. Drizzle all slices with balsamic glaze if you choose to use.

Notes

  • Use a grill pan or oven to toast the bread until lightly golden and crisp, rubbing with garlic for enhanced flavor.
  • Drain excess liquid from the tomato mixture to prevent sogginess before topping the bread.
  • Prepare bread slices in advance and add toppings just before serving to maintain crispness.
  • Consider adding cheese such as ricotta, Parmesan, or feta for a variation in texture and taste.
  • You can serve the tomato topping separately for guests to assemble their own bruschetta if desired.
