Bruschetta with Tomato, Anchovy, and Garlic

Bruschetta with Tomato, Anchovy, and Garlic features toasted bread slices rubbed with garlic and topped with a vibrant mixture of chopped plum tomatoes, minced anchovies, fresh basil, balsamic vinegar, and seasonings. The combination yields a bright, savory topping with a balance of acidity and umami, paired with crisp toasted bread for a flavorful appetizer or snack.

Description

The recipe starts by brushing bread slices with olive oil and toasting them in a hot oven until golden with a crisp texture. Rubbing the toasted bread with halved garlic cloves infuses a subtle garlic aroma without overpowering.

The topping blend consists of seeded and chopped plum tomatoes mixed with minced anchovies, finely chopped fresh basil, balsamic vinegar, a hint of sugar, and olive oil. Salt and black pepper are added to enhance and balance flavors. Anchovies bring a salty umami depth that complements the acidity of the tomatoes and vinegar.

This bruschetta is served immediately after assembling to maintain the contrast between crunchy bread and juicy topping. It works well as a starter or light snack.
