Brussels Sprouts Caesar Salad Recipe

Brussels Sprouts Caesar Salad combines both roasted and shaved Brussels sprouts with a creamy Caesar dressing made from mayonnaise, Parmesan, lemon juice, anchovy paste, Dijon mustard, and garlic. The roasted sprouts develop tender, browned edges while the shaved sprouts add a crisp, fresh contrast. Tossed with crunchy croutons, this salad offers a mix of textures. The bright, tangy dressing balances the savory vegetables and salty anchovy flavor. It's a useful way to enjoy Brussels sprouts both cooked and raw in a vibrant salad.

Description

Brussels Sprouts Caesar Salad Recipe brings together two preparations of Brussels sprouts—roasted and shaved. Roasting the sprouts with olive oil and salt at 400°F for 15-20 minutes creates a tender texture with caramelized, golden spots. The remaining sprouts are shaved thinly to maintain a fresh crispness that contrasts with the warm roasted pieces. The dressing, made from mayonnaise, Parmesan, lemon juice, anchovy paste, Dijon mustard, finely minced garlic, salt, and black pepper, adds a creamy, tangy, and slightly savory dimension typical of a Caesar salad.

The salad is assembled by combining roasted Brussels sprouts, shaved Brussels sprouts, and crunchy homemade or store-bought croutons, topped with the dressing tossed to coat evenly. This combination highlights both the nutty flavors of roasted sprouts and the bright crunch of raw sprouts, enhanced by the savory, creamy dressing and textured croutons.

Serve this salad immediately after tossing to retain the crispness of the shaved sprouts and crunch of the croutons. It pairs well as a side dish to grilled meats or as a light lunch option.

Homemade croutons elevate the salad, but store-bought can be used for convenience. The recipe's dressing is a smaller portion of a basic Caesar, so making a full batch can provide extra dressing for other salads. Crispy chickpeas can be used as an alternative topping to croutons for a different crunch.

Ingredients

Servings
  • 2 lb Brussels sprouts
  • 1 tablespoon olive oil
  • ½ teaspoon salt sea salt
  • 3 cup croutons see notes, homemade

The Dressing

  • ¼ cup mayonnaise neutral-flavored
  • 3 tablespoons Parmesan Cheese grated
  • 2 tablespoons lemon juice fresh is best!
  • 1 teaspoon anchovy paste
  • ½ teaspoon Dijon mustard
  • 1 small garlic finely minced, clove
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Cut 1 ½ lb of the brussels in half, put them on a baking sheet, and toss them in the olive oil and salt. Put the brussels into the oven and roast them for 15-20 minutes, until they are tender and brown in spots.
  2. Shave the remaining brussels by cutting them in half, laying the flat sides down, and then thinly slicing them.
  3. Make the dressing by whisking the dressing ingredients in a small-sized bowl.
  4. To assemble the brussels sprouts caesar salad, put the roasted brussels into a salad bowl. Add the shaved brussels and croutons and pour the dressing over the top. Toss well and then serve right away.

Notes

  • Homemade croutons enhance the salad texture but store-bought croutons are a quicker option.
  • Crispy chickpeas can substitute croutons to add different crunchy texture.
  • The dressing quantity here is a third of the full Caesar dressing recipe; consider making a full batch for leftovers.
