Brussels Sprouts Salad

Ingredients

  • 1 pound Brussels sprouts
  • 1 tsp olive oil
  • ¼  tsp salt
  • 1 apple chopped
  • ½  cup pomegranate arils
  • ½ cup pecan chopped
  • cup apricots chopped
  • ⅓  cup dried cranberries

For lemon thyme dressing

  • ¼ cup extra virgin olive oil
  • tbsp lemon juice
  • 1 clove garlic
  • ¼ tsp dried thyme
  • ½ tsp ground pepper
  • salt to taste

Instructions

  1. Remove the ends of Brussels sprouts and cut lengthwise, thinly slice them and add the shredded  Brussels sprouts to a large bowl.
  2. Add olive oil, salt and massage the shredded Brussels sprouts for 2 minutes.
  3. To the same bowl add in the chopped apples, pomegranate, pecans, apricots, and cranberries and mix them.
  4. Prepare the vinaigrette  by combining the ingredients mentioned for dressing in a jar and shake well.
  5. Pour the dressing over the salad and toss to combine.
  6. Transfer them to a plate or bowl and serve.
