Bubble Up Pizza Casserole with Biscuits (Kid-Friendly!)

Bubble Up Pizza Casserole with Biscuits combines ground beef, pizza sauce, peppers, and pepperoni, layered over biscuit pieces, baked until golden and bubbly. The biscuits expand and cook through while absorbing the savory flavors, producing a hearty casserole that's both playful and filling. This comforting dish is a simple way to enjoy pizza flavors in a warm, sliceable form appealing to kids and adults alike.

Description

Bubble Up Pizza Casserole with Biscuits blends classic pizza ingredients like ground beef, pizza sauce, shredded mozzarella, and sliced pepperoni over cut biscuit dough pieces. The biscuit pieces soften and rise during baking, bubbling up and creating a tender base that absorbs the robust pizza sauce and meat flavors. Adding diced bell peppers contributes a subtle sweetness and texture contrast, though they can be omitted if preferred. After topping with pepperoni and cheese, the casserole is baked until the biscuits are cooked and the cheese melts golden brown.

The resulting texture combines soft, doughy biscuit pockets with savory meat and melted cheese, imitating pizza flavors in a casserole form. This format allows for easy portioning and is convenient for family meals. Variations can include more vegetables or increased protein content, making it adaptable to preferences.

This casserole serves well warm as a standalone meal or with a simple side salad. It is also suitable for preparing in advance and reheating; leftovers reheat well in an air fryer, which restores a crispy edge while keeping the interior soft. The dish can be frozen once cooled and sliced for convenient future meals.

Adjust biscuit brands or use gluten-free dough if needed. Watch the baking time to prevent excessive browning of the biscuit tops by covering with foil as necessary. Let the casserole rest briefly after baking to firm up the layers for easier slicing.

Ingredients

Servings
  • 1 lb. ground beef 96/4, lean
  • 2 medium bell pepper red & green, finely diced (can omit
  • 14 oz. pizza sauce jar
  • 1 (16-oz.) Biscuit Pillsbury Grands, canned
  • 1.5 cups mozzarella cheese shredded
  • 1.5 oz turkey pepperoni sliced

Instructions

  1. Preheat the oven to 375 degrees F. Spray a 9x13-inch baking dish with cooking spray.
  2. Add the ground beef to a large skillet over medium heat and cook, crumbling as you go, for 3-4 minutes. Season with salt and pepper to taste (I added about 1/2 tsp salt and 1/4 tsp of pepper).
  3. Then add the diced peppers. Continue to saute until peppers are soft and beef is no longer pink. Then drain any and all excess liquid from the skillet and mix in the pizza sauce.
  4. Cut each biscuit into six pieces then place into the greased casserole dish. Add the beef mixture.
  5. Then top with the shredded cheese and sliced pepperoni.
  6. Bake uncovered for 25-30 minutes, or until biscuits have bubbled up and are cooked through. Cover with foil if needed to prevent the tops from getting too browned.
  7. Let cool for 5-10 minutes then slice and enjoy!

Notes

  • Add vegetables like mushrooms, broccoli, or onions to increase fiber and flavor.
  • You can increase ground beef up to 1.5 pounds for more protein without changing cooking method.
  • Leftovers reheat well in an air fryer for a crispy outside and soft inside.
  • Once completely cooled, freeze individual slices wrapped tightly to store for later use.
  • Use gluten-free biscuit dough if gluten intolerance requires it, shaping small balls to replace biscuit pieces.
