Ingredients
- 1 lb. ground beef 96/4, lean
- 2 medium bell pepper red & green, finely diced (can omit
- 14 oz. pizza sauce jar
- 1 (16-oz.) Biscuit Pillsbury Grands, canned
- 1.5 cups mozzarella cheese shredded
- 1.5 oz turkey pepperoni sliced
Instructions
- Preheat the oven to 375 degrees F. Spray a 9x13-inch baking dish with cooking spray.
- Add the ground beef to a large skillet over medium heat and cook, crumbling as you go, for 3-4 minutes. Season with salt and pepper to taste (I added about 1/2 tsp salt and 1/4 tsp of pepper).
- Then add the diced peppers. Continue to saute until peppers are soft and beef is no longer pink. Then drain any and all excess liquid from the skillet and mix in the pizza sauce.
- Cut each biscuit into six pieces then place into the greased casserole dish. Add the beef mixture.
- Then top with the shredded cheese and sliced pepperoni.
- Bake uncovered for 25-30 minutes, or until biscuits have bubbled up and are cooked through. Cover with foil if needed to prevent the tops from getting too browned.
- Let cool for 5-10 minutes then slice and enjoy!
Notes
- Add vegetables like mushrooms, broccoli, or onions to increase fiber and flavor.
- You can increase ground beef up to 1.5 pounds for more protein without changing cooking method.
- Leftovers reheat well in an air fryer for a crispy outside and soft inside.
- Once completely cooled, freeze individual slices wrapped tightly to store for later use.
