Description

The recipe starts by melting creamy peanut butter and unsalted butter over low heat. The formed balls are dipped in melted semi-sweet chocolate enriched with coconut oil for smoothness, creating a glossy and firm shell as the chocolate sets. Optional toppings such as sprinkles, chopped nuts, or toffee bits can be added before the chocolate hardens to add variety.

  • 1 ½ cup peanut butter like Jif or Skippy, creamy
  • ¼ cup butter unsalted
  • 2 cups rice krispie cereal
  • 1 ½ cups powdered sugar
  • 1 ½ cups semi sweet chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Heat a saucepan over low heat and add creamy peanut butter and butter. Let melt and whisk together until well combined.
  2. In a mixing bowl, add Rice Krispie cereal and powdered sugar. Toss together so ingredients are well mixed.
  3. Pour the melted butter/peanut butter onto the powder sugar covered Rice Krispies. Use a rubber spatula to mix everything together. This will take a few minutes.
  4. Tip: if you have time to chill the mixture for 10-15 minutes prior to forming them into a ball, it makes it much easier (and less sticky).
  5. Once everything is coated, spray a cookie scoop with cooking spray. Scoop even sized balls and place onto parchment paper. For perfectly shaped Buckeye Balls (or if you don’t have a cookie scoop), grease your hands and roll the mixture into balls.
  6. In a microwave safe bowl, melt the chocolate chips with the coconut oil. Microwave in 30 second intervals, stirring between each interval until chocolate is completely liquid (you may also do this in a double boiler on the stove - see notes).
  7. Use a spoon or two forks to lower the peanut butter balls into the melted chocolate (again, if the balls are chilled, it makes this step much smoother). Spoon chocolate over the top and ensure they’re evenly coated before removing. You can also use a thin skewer - simply place the buckeye ball on the skewer and use it to rotate in the chocolate.
  8. Place the chocolate covered balls on the parchment paper lined baking sheet / wire rack. Add whatever garnishes you wish.
  9. Place the baking sheet in the refrigerator until chocolate has hardened. Enjoy!

Notes

  • Use creamy peanut butter only; natural peanut butter can cause oiliness and prevent proper formation.
  • Melt chocolate using a double boiler or microwave in short bursts, stirring frequently for smoothness.
  • If mixture is crumbly, add melted peanut butter in small increments to improve texture.
  • Store finished balls in an airtight container on the counter if cool, or refrigerate to keep chocolate firm in warm conditions.
