Description
Buckeye Bars start with a dough made by thoroughly beating creamy peanut butter with softened butter and vanilla extract, then gradually mixing in powdered sugar to reach a firm, dough-like consistency. This mixture is pressed evenly into a parchment-lined 9x9 baking dish to form the base.
Separately, chocolate chips and optional coconut oil are melted together until smooth. The coconut oil helps create a glossy appearance and smooth texture in the chocolate layer. The melted chocolate is poured evenly over the peanut butter crust and spread to cover.
Once assembled, the bars are chilled to allow the chocolate topping to solidify and the flavors to meld, resulting in a firm but tender bar combining creamy peanut butter and shiny chocolate. These bars hold well refrigerated and can be served cold as a rich peanut butter dessert or snack.
Using powdered sugar measured carefully—not packed—and choosing between milk, dark, or semi-sweet chocolate chip types allow some customization of sweetness and chocolate intensity.
Ingredients
- 1 cup peanut butter creamy
- 1 tick butter softened
- 1 teaspoon vanilla extract
- 2 ½ cups powdered sugar do not pack
- 2 cups chocolate chips
- 2 tablespoons coconut oil optional
Instructions
- Line a square 9x9 baking dish with parchment paper.
- Add the peanut butter and softened butter to the bowl of a stand mixer and beat on medium speed with a paddle attachment until combined thoroughly, scraping down the sides as it blends.
- Add the vanilla extract and blend on low speed and then add the powdered sugar slowly. (careful not to over pack the measuring cup. see notes)
- Once all powdered sugar is added, continue to mix on low speed until a ball forms. The dough should not be too wet. If it is add a little more powdered sugar.
- Transfer the peanut butter mixture to the lined pan and press it down with fingers or he back of wooden spoon (press into the corners well)
- In a separate microwave safe bowl, add the chocolate chips and coconut oil and microwave for 30 seconds then stir and heat for 20-30 more seconds.
- Pour the melted chocolate mixture over the peanut butter layer and use a spatula to spread the chocolate evenly over top.
- Place the bars in the refrigerator for approximately 2 hours to allow the chocolate to fully hardened.
- Top with sea salt, if desired.
Notes
- Store the bars in an airtight container in the refrigerator for up to three days to maintain freshness.
- Choosing dark or milk chocolate chips allows tailoring the chocolate’s sweetness and flavor intensity.
- Use coconut oil in the chocolate melt to improve its texture and give it a nice shine.
- Measure powdered sugar by spooning it lightly into measuring cups and leveling it to avoid overpacking, which can make bars crumbly.
