Buckeye Brownies

Two of my favorite flavors - chocolate and peanut butter! You can start this recipe with homemade brownies or just use a box mix to keep it simple. Either way, these turn out thick, rich, and so fudgy!

Servings

For the brownies:

  • 1 recipe brownies in 9x13 baking dish, prepared

For the peanut butter:

  • 1 cup peanut butter creamy
  • 1/2 cup butter softened
  • 2 1/2 cups powdered sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla

For the ganache:

  • 1 cup heavy whipping cream
  • 2 cups chocolate chips semi-sweet

Instructions

To make the brownies:

  1. Prepare the brownies according to recipe or make brownies from a box mix, using a recipe for a 9x13 sized batch of brownies.
  2. Allow brownies to cool completely before proceeding with recipe.

To make the peanut butter layer:

  1. In a large bowl, use an electric mix to beat together the peanut butter, butter, powdered sugar, salt, and vanilla until well combined and smooth.
  2. Smooth the peanut butter mixture in an even layer over the cooled brownies.

To make the ganache:

  1. Heat the cream in a small sauce pan over medium heat until it just begins to bubble around the edges. Remove from heat and pour over the chocolate chips. Whisk until the chocolate is melted and smooth.
  2. Allow to cool for 10 minutes, stir, and then pour over the peanut butter and brownies. Smooth with an off-set spatula and then place the brownies in the fridge to set for at least 1 hour before slicing and serving.

Notes

  • If using a box of brownie mix, be sure to use a 'family size' box that's meant for a 9x13 pan or the brownies will be too thin for the amount of peanut butter on top. Our homemade brownies are perfectly thick and fudgy here!
  • You can use milk chocolate or dark chocolate chips in place of semi-sweet if preferred.
