Buckeye Recipe

Buckeye is a peanut butter and chocolate confection known for its smooth, sweet peanut butter center coated partially in chocolate. The recipe blends peanut butter, butter, vanilla, and powdered sugar into balls chilled to firmness, then dipped halfway into a melted mixture of semisweet chocolate chips and coconut oil. The final treats have a creamy, rich peanut butter core contrasted by a thin, firm chocolate shell. Buckeyes are ideal for satisfying peanut butter and chocolate cravings with a soft yet slightly firm texture.

Description

The Buckeye Recipe combines smooth peanut butter with unsalted butter and vanilla extract, which when mixed with powdered sugar creates a sweet, firm filling. After chilling the peanut butter balls, they are dipped partway into a melted blend of semisweet chocolate chips and coconut oil, which cools to a glossy, slightly flexible chocolate coating. This selective dipping forms the characteristic Buckeye look, with one side covered in chocolaty exterior and the other revealing creamy peanut butter inside.

The final confection offers a contrast between a soft, rich peanut butter center and a thin, slightly crisp chocolate shell. The bites can be refrigerated to maintain firmness and enjoyed as a festive snack or dessert.

Ingredients

Servings
  • 1 cup peanut butter smooth
  • 5 tablespoons butter unsalted
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups semisweet chocolate chips
  • 2 tablespoons coconut oil

Instructions

  1. Add the peanut butter, butter, and vanilla to a large bowl, and using an electric mixer beat them just until combined.
  2. Add powdered sugar and mix on low speed until combined. Scrape down the sides and bottom of the bowl a few times during this step.
  3. Using a small cookie spoon or tablespoon, take about one tablespoon of the peanut butter mixture and roll into balls.
  4. Set them onto a baking sheet covered with parchment paper and chill until firm. At least 20-30 minutes.
  5. Add chocolate and coconut oil to a medium bowl and melt by microwave it for 1 minute, after that stir well, and if needed microwave for another 30 seconds. Stir to combine and set aside to cool to room temperature.
  6. Use a skewer or toothpick to dip a bit more than halfway the peanut butter balls into the chocolate.
  7. Chill to allow the chocolate to firm up and enjoy. Run a small knife or spatula over the tops to hide the holes.
