Buckeyes Recipe
Description
The Buckeyes Recipe combines creamy peanut butter, softened butter, vanilla, and powdered sugar to create a rich, smooth filling shaped into one-inch balls. After chilling to firm, each ball is dipped in melted semisweet chocolate but left partially uncovered at the top, preserving the peanut butter's color and adding a distinctive appearance. The chilling step ensures a firm texture that holds the chocolate coating without melting or losing shape.
These bite-sized treats offer a sweet balance between nutty center and bittersweet chocolate shell. They can be stored chilled in an airtight container for up to two weeks or frozen for longer periods, making them suitable for preparing ahead for gatherings or sharing. Buckeyes are typically served at room temperature shortly after removal from refrigeration for best texture and flavor.
The original notes recommend storing these in the refrigerator for long-term freshness while allowing a few hours at room temperature if served immediately. Freezing in a sealed bag extends shelf life by several months, helpful for make-ahead preparations for holiday celebrations, parties, or casual occasions.
Ingredients
- 1½ cups peanut butter creamy
- 1 cup butter softened
- ½ teaspoon vanilla extract
- 6 cups powdered sugar
- 4 cups semisweet chocolate chips
Instructions
- Mix together your peanut butter, softened butter, vanilla and powdered sugar, in a large bowl. Roll into 1" balls and place on a cookie sheet, lined with wax paper. (NOTE: If mixture is dry, add a tablespoon or two of milk to help bring the mix together).
- Press a toothpick into the top of each ball and chill in freezer for a minimum of 30 minutes, or until firm.
- Just before removing from freezer, melt chocolate chips in a small saucepan over lowest heat. Stir frequently until smooth.
- Using your toothpick, dip each frozen peanut butter ball in chocolate, leaving a small portion of peanut butter showing at the top. Place on cookie sheet and remove toothpick. You may smooth over the hole left from the toothpick with your fingertip. Refrigerate until ready to serve.
Notes
- Store Buckeyes in an airtight container in the refrigerator for up to two weeks to maintain freshness.
- If serving soon after preparation, they can be kept at room temperature for a few hours without losing texture.
- For longer storage, freeze Buckeyes in a resealable plastic bag; they can last several months frozen.
- Use a toothpick to dip each peanut butter ball in chocolate and remove it carefully to maintain shape; smooth any holes left from the toothpick with your fingertip.
