  • 1 cup buckwheat uncooked
  • 2 cups water
  • 3 tbsp butter unsalted
  • 1 onion chopped, medium
  • 16 oz mushrooms sliced
  • 1 cup green onions chopped
  • salt to taste
  • black pepper to taste, ground

Instructions

  1. Prepare the ingredients; chop onions and slice mushrooms. Bring water to boil in a pot, add the buckwheat and salt, to taste. Cover and cook on low heat for 20-25 minutes.
  2. Preheat a pan, add butter and onions to the pan. Then add mushrooms to the pan and cook until golden brown.
  3. Combine mushroom mixture with the cooked buckwheat, let it sit for about 5 min to allow flavors to meld.
  4. Finally, add in the chopped green onion and stir to combine. Serve and enjoy!
