Description
Buckwheat with Mushrooms pairs the distinctive, slightly nutty taste of buckwheat grain with golden sautéed mushrooms and onions in butter. The buckwheat is simmered in salted water until tender and fluffy. Separately, onions and mushrooms are browned in butter to develop a caramelized, savory flavor.
After blending the cooked buckwheat with the mushroom mixture and letting the flavors meld, chopped green onions are stirred in for a fresh contrast. The dish delivers a pleasant combination of tender grains and earthy mushrooms with the richness of butter. It can be served warm as a side to meats or as a satisfying vegetarian meal component.
Ingredients
- 1 cup buckwheat uncooked
- 2 cups water
- 3 tbsp butter unsalted
- 1 onion chopped, medium
- 16 oz mushrooms sliced
- 1 cup green onions chopped
- salt to taste
- black pepper to taste, ground
Instructions
- Prepare the ingredients; chop onions and slice mushrooms. Bring water to boil in a pot, add the buckwheat and salt, to taste. Cover and cook on low heat for 20-25 minutes.
- Preheat a pan, add butter and onions to the pan. Then add mushrooms to the pan and cook until golden brown.
- Combine mushroom mixture with the cooked buckwheat, let it sit for about 5 min to allow flavors to meld.
- Finally, add in the chopped green onion and stir to combine. Serve and enjoy!
