Buffalo Cauliflower with Blue Cheese Dressing

Ingredients

  • 8 cups cauliflower florets
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup hot sauce
  • ¼ cup butter (unsalted)
  • 4 ervings light blue cheese dressing (to serve)
  • celery sticks (to serve)
  • Blue cheese crumbles (optional garnish)

Instructions

  1. Pre-heat oven to 400 degrees and line a baking sheet with foil. Spray foil with cooking spray and set aside.
  2. In a medium bowl, toss together cauliflower florets with olive oil, salt and pepper. Spread in an even layer on baking sheet and roast until caramelized, about 20-25 minutes.
  3. While cauliflower is roasting, melt butter in a small sauce pan over medium heat. Remove from heat and whisk in hot sauce; set aside.
  4. Add cooked cauliflower back to the medium bowl and drizzle with the buffalo sauce. Toss until evenly coated and serve on a platter with blue cheese dressing  and celery sticks.

  • Serving Size: 1 1/2 cups cauliflower and 2 tablespoons blue cheese dressing
