Buffalo Chicken Baked Feta Pasta
Description
The recipe features baking intact feta cheese with cherry tomatoes until the tomatoes burst and the cheese softens and melts. This baked base is then combined with cooked pasta, diced cooked chicken, buffalo hot sauce, and a splash of pasta cooking water or stock to create a creamy, spicy sauce that coats the noodles. Italian seasoning and salt add aromatic depth to the cheese and tomato mixture.
The texture balances the creaminess of the blended feta and the tenderness of cooked pasta and chicken, alongside the roasted juices of the tomatoes. Buffalo sauce provides a characteristic tangy and mildly spicy flavor contrasting with the rich feta. Cooking options include the oven or air fryer for baking the feta and tomatoes, or the Instant Pot, which pressure-cooks all ingredients with stock to infuse flavor quickly.
This recipe results in a comforting pasta dish suitable for a flavorful weeknight meal. Serving as a single, cohesive dish, it brings together familiar ingredients in an easy baked method that yields a creamy sauce without separate sauces or steps after baking.
