Buffalo Chicken Bites (no breading)
Description
This recipe starts with cutting chicken breast into bite-sized pieces, which are seasoned evenly with onion powder, garlic powder, paprika, salt, and black pepper. The chicken is then cooked in a skillet with oil or non-stick spray until done and lightly browned. Meanwhile, a buffalo sauce is prepared by heating wing sauce with butter and brown sugar (or honey) until smooth.
The cooked chicken is tossed in the warm sauce and simmered briefly to allow the flavors to coat the pieces. The final dish presents tender chicken bites with a spicy, buttery buffalo flavor with a hint of sweetness from the sugar or honey. Serving suggestions include dipping sauces like ranch or bleu cheese, fresh carrots, celery, or potatoes.
This dish offers a breading-free buffalo chicken alternative, focusing on bold seasoning and sauce coating. Adjusting sauce sweetness or using honey substitution is simple, and the method allows for easy oil-free cooking with non-stick spray.
Ingredients
- 2 lbs. chicken breast (cut into bite-size pieces)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon black pepper
- 1/4 to 1/2 teaspoon salt
- cooking oil or non-stick cooking spray
Buffalo Sauce:
- 3/4 cup buffalo wing sauce (Frank's Red Hot Buffalo Wing Sauce)
- 4 Tablespoons butter
- 3 Tablespoons brown sugar (or 2 Tablespoons honey)
Instructions
- Start by cutting the chicken breast into bite-size pieces. Toss in a bowl with salt, pepper, garlic powder, onion powder, and paprika until evenly coated.
- Heat a large skillet over medium-high heat. Drizzle with olive oil. If you prefer not to use oil, spray with non-stick cooking spray. Cook for 3-4 minutes per side or until the chicken is cooked through. The cooking time will depend on the size and thickness of the chicken breast.
- In a small pot or in a microwave safe bowl, heat the buffalo sauce, butter, and sugar together until the sugar is dissolved. Toss with cooked chicken coating each piece with the sauce. Simmer for 5 minutes to allow the sauce to coat the chicken.
- Serve with ranch dressing, bleu cheese dressing, carrots, and celery or with mashed potatoes or smashed potatoes.
Notes
- For added freshness, sprinkle chopped scallions over the finished buffalo bites.
- Honey can be used instead of brown sugar; use 2 tablespoons if substituting.
- If avoiding oil, spray the skillet with non-stick cooking spray instead of using oil.
