Buffalo Chicken Skillet

This buffalo chicken skillet is made with chicken breasts, celery, carrots, sweet potato, white beans, and of course plenty of buffalo hot sauce.

Ingredients
- 2 tablespoon olive oil divided
- 1 pound chicken breast cut into bite sized pieces, boneless, skinless
- 1/2 teaspoon cumin ground
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 cup yellow onion diced
- 1/2 cup carrot diced
- 1/2 cup celery diced
- 1 cup sweet potato peeled and diced
- 1/4 cup buffalo hot sauce Use 1/3 cup if you want it spicier
- 1/2 cup water or low sodium chicken broth
- 14 ounce White beans rinsed and drained, low sodium, canned
- 1/2 cup Colby jack cheese shredded; or cheddar cheese
- 1/4 cup blue cheese optional, crumbled
- cilantro optional, for garnish
Instructions
- Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add in the chicken, all of the spices, salt and pepper, and cook until it's browned on the outside and cooked through. Remove it from the skillet and onto a plate.
- Pour the remaining tablespoon of oil to the skillet and add in the onion, celery, carrots, and sweet potato. Season with salt and pepper and sauté the vegetables over medium heat until they're tender.
- Add the chicken back into the skillet along with the white beans, then pour in the buffalo sauce and either water or chicken broth. Stir everything together and let it heat through. Top with the shredded cheese and cover with the lid until the cheese melts. Garnish with crumbled blue cheese and chopped cilantro before serving if desired.
