Buffalo Chicken Sweet Potato Recipe

20 minute meal! These Buffalo Chicken Stuffed Sweet Potatoes are topped with a light blue cheese yogurt sauce. An easy weeknight dinner recipe!

Ingredients

Servings
  • 2 medium sweet potatoes
  • 2 teaspoons olive oil divided
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • 2 small cooked boneless skinless chicken breasts, shredded
  • ¼ cup Frank's Red Hot sauce

The Yogurt Sauce:

  • ¼ cup plain nonfat Greek yogurt
  • 1 tablespoon nonfat milk
  • 2 tablespoons ½ ounce crumbled blue cheese
  • pinch of salt

Instructions

  1. Pierce the sweet potatoes all over with a fork. Cook in the microwave on HIGH until tender when pierced with a fork, about 4 minutes per side. Let the potatoes rest until cool enough to handle.
  2. Cut the potatoes in half lengthwise. Carefully scoop the flesh out of the potatoes and place in a medium-sized bowl. Reserve the skins. With the back of a fork, mash the potato flesh until most lumps are gone. Stir in 1 teaspoon olive oil.
  3. In a small bowl, stir together the paprika, garlic powder and salt. Stir half of the mixture into the mashed potato. Divide the mashed sweet potato evenly between the potato skins.
  4. In a medium bowl, toss the shredded chicken with the remaining 1 teaspoon olive oil, remaining spice mixture, then stir in the hot sauce until the chicken is coated.
  5. Divide the chicken mixture evenly between the stuffed sweet potatoes.
  6. Top each with a dollop of the yogurt sauce.

The Yogurt Sauce:

  1. In a small bowl, stir together the yogurt, milk, blue cheese and salt.
