Ingredients
- 2-3 cups cherry tomato halved
- 3 cucumber chopped into about ⅓ inch pieces, Persian
- 1 bell pepper chopped, orange
- ⅓ cup basil roughly chopped
- ¼ cup parsley chopped into about ⅓ inch pieces
- ¼ cup scallions chopped
- 1 ball burrata cheese torn
For the Vinaigrette
- 4 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 3 cloves garlic chopped
- 1 shallot finely chopped
- 1 teaspoon oregano dried
- salt to taste, kosher salt and freshly cracked
- black pepper to taste, kosher salt and freshly cracked
Instructions
- Combine all chopped vegetables in a bowl.
- Whisk together all the ingredients for the dressing. Drizzle on top of the chopped vegetables and toss to combine. Fold in the burrata. Adjust salt and pepper if needed or add an extra drizzle of olive oil. Serve immediately.
