Burrata Filled Tomatoes

Burrata Filled Tomatoes present a simple appetizer of medium-sized round tomatoes hollowed and stuffed with creamy burrata cheese. Topped with fresh basil and finished with a drizzle of good quality extra virgin olive oil and a sprinkle of sea salt, these offer a fresh contrast of juicy tomato and rich cheese. The preparation highlights the natural flavors and textures of the fresh ingredients.

Description

This recipe involves coring medium organic tomatoes and filling each with a portion of burrata cheese, creating an attractive and easy-to-make appetizer. The creaminess of burrata balances the natural acidity and sweetness of the ripe tomato. A fresh basil leaf adds aroma and subtle herbaceous notes to the flavor profile.

The finished tomatoes are arranged on a plate drizzled with olive oil. Guests can season their individual tomatoes with sea salt and additional olive oil to taste, customizing the seasoning level. The dish relies on clean, fresh ingredients without cooking, emphasizing natural textures and contrasts.

Cherry tomatoes can be used instead for smaller, bite-sized servings. The burrata amount can be adjusted accordingly to fit smaller tomato cavities, making this dish adaptable for different serving sizes or occasions.

Ingredients

Servings
  • 6 tomato round, medium sized, organic
  • 16 oz burrata cheese (tub)
  • ½ oz basil fresh, for topping, leaves
  • tsp salt good quality salt, more or less as desired, sea salt
  • 1 Tbsp extra virgin olive oil (good quality, like Olio Piro)

Instructions

  1. Core out the center of the tomatoes.
  2. Cut the burrata into 6 pieces and place each piece inside of a tomato (Option 2: you can also use a larger number of smaller tomatoes and cut the burrata into more pieces, if you prefer. This option would create a smaller appetizer).
  3. Add a few leaves of fresh basil to top the creation.
  4. Drizzle a serving plate with some olive oil and arrange the tomatoes on the plate.
  5. Serve with salt and a cruet of the extra virgin olive oil, so each guest can season and drizzle their own tomato.

Notes

  • For bite-sized appetizers, substitute medium tomatoes with cherry tomatoes and adjust burrata portions to fit.
