Burrata With Grilled Bread

Burrata With Grilled Bread features fresh burrata cheese gently warmed to room temperature paired with thick slices of grilled bread. Olive oil is drizzled around the burrata base, preserving its creamy white surface. The grilled bread is charred for a smoky flavor and firm texture that complements the cheese’s soft, creamy interior.

Description

This dish centers around high-quality burrata cheese that is warmed in very warm water for 10 minutes to remove refrigerator chill and enhance creaminess. The cheese is carefully drained and placed on a towel. Bread slices, cut about half an inch thick diagonally, are charred on both sides until marked with a good grill char.

The burrata is presented whole in a shallow dish with extra-virgin olive oil pooled around its base—not over the cheese itself—to maintain its pristine look. The grilled bread slices offer a crunchy, subtly smoky vehicle to scoop up the rich, creamy cheese center. This setup allows guests to serve themselves directly at the table.

This preparation highlights the contrast between the warm burrata’s delicate texture and the robust texture of grilled bread paired with fruity olive oil to round out the simple flavors.

Ingredients

Servings
  • 1 pound burrata cheese be vigilant with the temperature and freshness as burrata sours so quickly
  • bread cut on the diagonal about 1/2 inch (12 mm) thick, store-bought or homemade, slices
  • extra-virgin olive oil for drizzling

Instructions

  1. Remove any wrapping, paper, and twine from the burrata. Place the cheese in a bowl of very warm water and let it rest there 10 minutes. (You want to make sure the burrata sits in the warm water long enough to lose the refrigerator chill at its creamy center.)
  2. Drain it well and set it on a clean towel.
  3. Grill some bread, both sides, to a good char. Stack on a small plate.
  4. Place the whole burrata in a shallow small bowl.
  5. Generously pool some extra-virgin olive oil around the base of the burrata—you want to keep the cheese itself pristine white, so don’t drizzle the oil all over the cheese, just around its base.
  6. Set the burrata with grilled bread on the table alongside a stack of plates and some knives.
