Butter Noodles (aka Pasta with Butter)
Description
The recipe directs boiling a salted pot of water seasoned to taste like seawater to properly flavor the pasta during cooking. Spaghetti is cooked until al dente, ensuring a pleasant firmness without mushiness. Once drained using a pasta fork, the noodles are immediately plated, then tossed with a tablespoon of butter to fully coat each strand.
The butter melts into the hot noodles, creating a glossy, rich coating that enhances the neutral flavor of the pasta. The salt adds seasoning depth. This dish’s simplicity allows the pasta quality to stand out and works well as a quick side or a canvas for other ingredients or garnishes.
Adding grated Parmigiano Reggiano or Pecorino Romano cheese is a popular variation that adds a sharp, savory component. Alternatively, substituting butter with extra virgin olive oil provides a non-dairy but flavorful oil coating, aligning with a more Italian or vegan preparation.
Ingredients
- 6 oz spaghetti
- 1 Tbsp butter enough to coat the pasta
- ⅛ tsp salt to taste, sea salt
Instructions
- Bring a pot of water to a boil, then add a good amount of salt. Taste the water, it should taste salty, almost like sea/ocean water. Then add spaghetti.
- Cook until al dente, not too hard, though (if you use a good quality pasta it won't get mushy).
- Use a pasta fork and remove the pasta from the water and place directly into two plates. Top with butter and mix until well-coated.
Notes
- Many enjoy topping butter noodles with freshly grated Parmigiano Reggiano or Pecorino Romano for added flavor.
- Use authentic Parmigiano Reggiano or Pecorino Romano cheeses to preserve traditional taste.
- For a vegan or more Italian-style version, substitute the butter with extra virgin olive oil.
