Ingredients
Sloppy Joe
- 2 pounds ground beef
- 1 small yellow onion, chopped (about ½ cup)
- 1 ½ cups (360 g) ketchup
- 2 teaspoons yellow mustard
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 cup water
Biscuits
- 2 ½ cups (312.5 g) all-purpose flour
- 4 teaspoons baking powder
- 2 teaspoons kosher salt
- 2 cups buttermilk
- ½ cup (1 stick / 113 g) unsalted butter, melted
Topping
- 1 tablespoon unsalted butter, melted
- Parsley, chopped, for garnish
Instructions
Sloppy Joe
- Preheat oven to 450°F.
- To a 13-inch oven-safe skillet over medium heat, add the ground beef and onion. Cook until the beef is no longer pink (8-10 minutes). Drain the excess grease.
- Stir in the ketchup, mustard, garlic powder, salt, pepper, and water. Mix until well combined. Set aside while you prepare the biscuit layer.
Biscuits
- In a medium bowl, whisk the flour, baking powder, and salt.
- Pour in the buttermilk and stir until the batter is mostly combined, being careful not to overwork the batter.
- Dollop biscuit dough on top of the sloppy joe mixture. Carefully spread the dough to create an even layer.
- Drizzle the melted butter evenly over the top of the biscuit layer. Bake for 20-25 minutes, or until the biscuits are golden brown and cooked through.
- Before serving, brush the top of the biscuits with additional melted butter and garnish with parsley. Serve warm.
