Buttered Carrots Recipe

Buttered Carrots are sliced carrots simmered briefly in water until tender, then finished with butter, garlic, salt, pepper, and fresh parsley. This simple preparation produces carrots that are soft yet retain some texture, enriched by garlic-infused butter and brightened with parsley for a gently savory side dish.

Description

The recipe begins by boiling sliced carrots in water with a lid to steam and soften them within minutes. Once the water evaporates, the carrots are pushed to one side of the pan, and butter is added to melt and lightly brown. Garlic, salt, and pepper follow, coated over the carrots, enhancing their natural sweetness with buttery richness and aromatic garlic notes.

The final step is cooking until the carrots reach softness without becoming mushy, preserving a tender but firm bite. Fresh minced parsley stirred in before serving adds a touch of color and a subtle herbal fresh flavor. This side dish complements many main courses with its straightforward seasoning and familiar textures.

Ingredients

Servings
  • 2 lb carrot sliced into 1" chunks
  • ½ cup water
  • 2 tablespoons butter
  • 1 clove garlic
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon parsley minced

Instructions

  1. Put the carrots and water into a medium-sized frying pan with a lid. Turn your stove to medium-high and bring the pan to a boil. Cover the lid and cook the carrots for 3 minutes, stirring once. Take the lid off and continue to cook the carrots until the water evaporates.
  2. Push the carrots to the side of the pan and add the butter.
  3. When the butter melts, add the garlic, salt, and pepper and stir the carrots. Continue to cook the carrots until they are soft but not mushy, about 2 minutes. Remove the pan from the heat and stir in the parsley.
