Buttered Dilly New Potatoes

  • 24 ounces potato such as petite white potatoes, new, small
  • 4 tablespoons butter divided, melted
  • ¼ teaspoon salt plus more to taste
  • 1 ½ tablespoons dill minced (or 1 teaspoon dried dill, fresh
  • ½ teaspoon garlic powder

Instructions

  1. Spray a small baking dish with cooking spray and set aside.
  2. Fill a large saucepan with about 1 inch of water. Bring to a boil, add potatoes, and cook (covered) for 10 minutes.
  3. Drain potatoes and place them in the prepared baking dish.
  4. Brush potatoes with about 2 tablespoons of the melted butter. Sprinkle with salt and place under the broiler for 10-15 minutes (or until tender), stirring regularly. The potatoes should have a nice golden crust on the outside.
  5. Stir dill and garlic into remaining melted butter. Pour butter mixture over hot potatoes and toss to coat. Serve warm.
