Buttered Noodles with Parmesan
Description
This recipe starts with boiling salted water for cooking egg noodles until just tender. After draining, a portion of the pasta cooking water is reserved to adjust the final dish's texture. The noodles are returned to the pot where unsalted butter and freshly grated Parmesan cheese are stirred in to melt and coat all strands.
Parsley or Italian seasoning adds a fresh herbal touch while freshly ground black pepper contributes mild heat and aromatic complexity. The reserved pasta water helps create a light sauce that binds ingredients without heaviness.
The dish serves as a versatile complement to a variety of main courses or can be enjoyed simply on its own. Its basic composition allows for easy adaptations like gluten-free or dairy-free substitutions by exchanging noodles and dairy ingredients accordingly.
Ingredients
- 1 Tbsp salt
- 12 oz. egg noodles
- 3 Tbsp butter unsalted, 45g
- 3 Tbsp Parmesan Cheese freshly grated, 18g
- 2 Tbsp parsley or 2 tsp Italian seasoning, freshly chopped
- black pepper to taste, freshly cracked ground
Instructions
- Fill a large pot with water. Add the salt and bring to a boil.
- Once boiling, add the egg noodles and cook for 5 minutes. Then reserve 1/4 cup of the cooking liquid and drain the noodles. Add the noodles back to the pot.
- Add the butter and Parmesan and stir until the butter has melted. Stir in half of the pasta cooking liquid or until desired consistency. Then stir in the chopped parsley. Add salt and freshly ground black pepper to taste and serve!
Notes
- To make this dish gluten-free, substitute traditional egg noodles with gluten-free noodles.
- For a dairy-free version, use dairy-free butter and cheese alternatives or omit cheese altogether.
