Buttermilk Oatmeal Bread Recipe

This is the most delicious buttermilk oatmeal bread recipe that is easy to prepare and tastes amazing. Wonderfully light and soft crumb, our buttermilk oatmeal bread is simply delicious.

Ingredients

  • 4 cups all purpose flour 500 grams
  • 2 teaspoon active dry yeast 6 grams
  • 1 1/4 cups rolled oats 100 grams plus some for topping
  • 2 teaspoons salt 12 grams
  • 1 tablespoon unsalted butter 30 grams
  • 2 tablespoons brown sugar 30 grams
  • 2 cups water lukewarm 105°F/40°C (480 grams)
  • 1 cup buttermilk 225 grams

Instructions

  1. Dissolve the yeast with 1/2 cup of lukewarm water and set aside.
  2. Add the remaining 1 1/2 cups of water into a pot and bring to a boil on medium-high heat. Add the oatmeal and stir, then reduce the heat to low and cook the oatmeal for about 4-5 minutes or until it begins to soften and become thick.
  3. Transfer the oatmeal into a mixing bowl with the hook attachment and allow it to cool for 15 minutes.
  4. Add the flour, yeast, butter, brown sugar, salt, and buttermilk and mix on low speed for about 5 minutes, if you notice the dough is too stiff, add a bit more water. Increase the speed to medium and continue to mix until the dough is smooth and elastic.
  5. Place the dough into a greased or floured bowl and cover with a plastic sheet or cloth. Let it sit for 45-60 minutes or until it doubles in volume.
  6. Turn the dough onto a floured working surface and degas it by patting it down. Divide the dough into two equal portions and gently round it. Cover the oatmeal buttermilk dough and let it rest for 10 minutes.
  7. In the meanwhile, grease 2 9″ x 4 1/2″ x 3″ baking pans and set them aside.
  8. Shape the two loaves into an oval shape, then roll them onto some oats, then place them into the baking pans. Cover and allow to proof for about 50-60 minutes or until it reaches the top rim of the pans.
  9. Once you notice the bread is almost proofed, Preheat the oven to 375°F/190°C.
  10. Bake the loaves for about 35-40 minutes or until golden brown in color. If you have a thermometer, you can insert it into the loaves, if it registers 205°F/ 96°C or above the bread is fully baked.
  11. Removes the bread from the oven, then depan them immediately. Allow the buttermilk oatmeal bread to cool on a wire rack for a least 40 minutes.
  12. Slice and Enjoy!
