Ingredients

  • 1 butternut squash peeled, seeds removed and diced
  • 1 white onion peeled and diced
  • 4 tablespoons butter unsalted
  • 2 teaspoons salt or as required, sea salt
  • 3 cups vegetable stock
  • 1 teaspoon star anise ground

Garnish:

  • 1 teaspoon black pepper freshly ground
  • 2 tablespoons heavy cream
  • 1/4 cup sunflower seeds toasted

Instructions

  1. In a 3 qt saucepan over medium heat, melt butter.
  2. Add onions and saute for 5 minutes, or until onions have turned translucent.
  3. Add butternut squash and vegetable stock. Mix. Bring to a boil.
  4. Reduce heat to low. Cover and cook for 20 minutes.
  5. Sprinkle star anise and mix. Remove from heat.
  6. Careful spoon into a blender and blend on low speed.
  7. Pour the mixture back into the soup pot, and re-heat. Cook for 2-3 minutes on low heat.
  8. Pour into soup cups, garnish with sunflower seeds, some crushed black pepper, and a drizzle of cream.
  9. Serve with toasted sourdough slices.
