Butterscotch Bars

Butterscotch Bars combine a tender, buttery blondie base with rich butterscotch chips folded throughout, baked until edges crisp slightly. The bars bring a gentle sweetness balanced by the soft chew of the brown sugar and smooth texture of the chips. They can be served as squares alone or enhanced with a homemade warm butterscotch sauce featuring butter, dark brown sugar, and cream, perfect for drizzling over ice cream. These bars offer a cozy dessert option for those who enjoy caramel-like flavors in a simple baked treat.

Description

Butterscotch Bars offer a classic dessert bar made with softened salted butter, light brown and granulated sugars, and vanilla for a flavorful base. Incorporating butterscotch chips adds bursts of mellow caramelized sweetness throughout the bars. The bars are baked in an 8 or 9-inch pan until a toothpick tests clean, creating a chewy yet tender texture with slightly crisp edges.

A rich butterscotch sauce is prepared separately by boiling butter, dark brown sugar, heavy cream, and vanilla, producing a creamy topping to pair with the bars or other desserts like ice cream. The sauce thickens as it cools and can be stored refrigerated in an airtight container.

Serve these bars as handheld treats or topped with the warm sauce and ice cream for a more indulgent dessert. Their balanced sweetness and buttery texture make them a satisfying option when a butterscotch flavor is desired without complex steps.

For storage, keep bars in an airtight container at room temperature or freeze them tightly wrapped for up to 3 months. The sauce stores well chilled in the refrigerator and should be reheated gently before serving.

Ingredients

Servings
  • ½ cup butter softened, salted
  • 1/2 cup granulated sugar
  • ½ cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ cup butterscotch chips
  • Optional: Serve with Ice Cream and Butterscotch Sauce

Butterscotch Sauce:

  • ½ cup butter at room temperature, salted
  • 1 cup dark brown sugar
  • 1 cup heavy whipping cream
  • 3 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350 degrees F.
  2. Add the butter, sugar and brown sugar to a mixing bowl and cream together until very smooth.
  3.  Add egg and vanilla and mix well.
  4. Add flour and baking powder and stir until combined.
  5. Fold in butterscotch chips (keep a small handful to sprinkle on top).
  6. Spread into a greased square (8 or 9 inch) baking pan and bake for about 25 minutes, or until a toothpick inserted comes out clean.
  7. Allow to cool before cutting into bars.

For the Butterscotch Sauce:

  1. Melt the butter in a saucepan over medium heat.
  2. Add the sugar and cream and stir well with a wooden spoon until blended.
  3. Bring mixture to a boil, reduce heat and boil for about 5 minutes, stirring often.
  4. Remove from heat and stir in vanilla. The sauce will thicken as it cools.
  5. Serve warm over ice cream.
  6. To store, refrigerate sauce in an air-tight container.

Notes

  • Store bars in an airtight container at room temperature for best freshness or freeze them wrapped tightly for up to three months.
  • The butterscotch sauce should be refrigerated in an airtight container and warmed gently when ready to serve.
  • Bars bake in an 8 or 9-inch pan; doubling the recipe fits a 9x13-inch pan.
