Butterscotch PB Monster Cookie Bars

Butterscotch PB Monster Cookie Bars combine creamy peanut butter, two types of oats, brown and granulated sugars, and a mix of chocolate and butterscotch chips for a chewy, sweet bar with a tender yet hearty texture. The bars are baked just until the edges turn golden, balancing softness and structure, and freeze well for later enjoyment. Customizable ingredients allow different chips or oats to alter texture and flavor.

Description

These cookie bars blend softened butter and creamy peanut butter with light brown and granulated sugars, creating a sweet, rich base. The inclusion of baking soda adds leavening, while salt balances sweetness. Eggs and vanilla enhance flavor, and the mixture incorporates quick and old-fashioned oats, building varied texture.

Chocolate chips and butterscotch chips contribute complementary sweetness and richness. After mixing, the dough is spread evenly in a pan and baked at 350°F until edges are lightly golden but the interior remains moist and tender. Cooling before cutting helps maintain bar shape.

The bars can be frozen and thawed with minimal texture loss. Options include using all quick or all old-fashioned oats and substituting butterscotch chips with peanut butter or extra chocolate chips. For gluten-free versions, verify all ingredients are certified gluten-free, as some brands of chips may not be.

Ingredients

Servings
  • ½ cup butter softened to room temperature, salted
  • 1 cup peanut butter creamy
  • cup light brown sugar
  • cup granulated sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 egg large
  • 1 teaspoon vanilla extract
  • 1 ¼ cups quick oats see note
  • 1 ¼ cups old-fashioned oats
  • 1 cup chocolate chips
  • 1 cup butterscotch chips or peanut butter chips or more chocolate chips (see note

Instructions

  1. Preheat the oven to 350 degrees F. Lightly grease a 9X13-inch pan or line with foil and lightly grease the foil (for easier cleanup). I use a metal pan; if using glass, you may want to decrease the oven temp to 325 degrees.
  2. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl using a handheld electric mixer, beat the butter, peanut butter, brown sugar, granulated sugar, baking soda and salt together until light and fluffy, 1-2 minutes, scraping down the sides of the bowl as needed.
  3. Add the eggs and vanilla and beat until well-combined. Add the quick oats, old-fashioned oats, chocolate chips and butterscotch chips and mix until evenly combined.
  4. Spread the dough evenly in the bottom of the prepared pan. Bake for 20-25 minutes until the edges are lightly golden - don't overbake or the bars might be dry and crumbly. Cool the bars in the pan before cutting into squares. These bars freeze great!

Notes

  • You can use either all quick oats or all old-fashioned oats; the texture varies slightly.
  • The recipe uses creamy peanut butter; other nut butters or natural peanut butter have not been tested.
  • Ensure all ingredients, especially oats and chips, are labeled gluten-free if needed.
  • Chocolate and butterscotch chip varieties can be swapped to preference.
