Butterscotch Pecan Pie
Description
The Butterscotch Pecan Pie starts by melting butterscotch chips with butter to form a silky base. This mixture is combined with corn syrup, beaten eggs, and vanilla extract, forming a thick custard that is folded with pecan halves for texture and nutty flavor. The filling is poured into an unbaked 9-inch pie crust and baked between 50 to 60 minutes at 350°F. The top browns slightly while the center remains a bit soft, resulting in a rich, glossy pie that firms as it cools.
This pie offers a contrast between the creamy butterscotch custard and crunchy pecans, with a buttery, flaky crust providing a sturdy base. The flavor balance is sweet and nutty, with warm vanilla and caramel notes from the butterscotch. After cooling for two hours, the pie slices cleanly and can be served as a decadent dessert.
Leftover pie should be stored covered in the refrigerator for up to four days, allowing the filling to remain fresh without drying out. Serving slightly chilled or at room temperature will let the flavors and texture be best appreciated.
