Ingredients

  • 3 Tablespoons olive oil
  • 1 yellow onion chopped
  • 2 garlic minced, cloves
  • 8 cups chicken broth can use vegetable broth, low sodium
  • 1 teaspoon kosher salt
  • ½ teaspoon thyme dried
  • ½ teaspoon oregano dried
  • ½ teaspoon basil dried
  • ½ teaspoon black pepper coarse ground
  • ½ cabbage 4-5 cups), sliced ¼ inch thick, head, sliced ¼ inch thick
  • 4 carrot peeled and chopped, large
  • 2 celery ribs sliced thin
  • 14.5 ounces diced tomatoes 1 can, petite

Instructions

  1. In a large Dutch oven add the olive oil over medium heat then add in the onions and garlic. Cook until the onions are soft, about 3-5 minutes.
  2. Next add in the broth, salt, pepper, thyme, oregano, basil, cabbage, carrots, celery and tomatoes. Stir until combined.
  3. Turn heat to high and bring to a boil, turn heat down to medium-low and simmer for 20-25 minutes, stirring occasionally, or until vegetables are soft.
  4. Pull off heat and serve immediately.
