Description

This recipe prepares pasta, typically spaghetti or linguini, cooked to al dente in salted water. While the pasta cooks, butter and olive oil are warmed together, and cracked black pepper is toasted in the fat to release its aroma and flavor fully. Once the pasta is drained—reserving some cooking water—the pasta is added to the pan with the butter and pepper mixture. Parmesan cheese and a portion of the cooking water are gradually incorporated while tossing the pasta, creating a glossy, creamy sauce that clings to each strand. Additional cooking water is added as needed to loosen and smooth the sauce.

Cacio e pepe is best served immediately, topped with extra Parmesan for additional richness. This dish highlights the interplay between sharp cheese and pungent pepper in a straightforward Italian classic.

  • 500 g (1lb) spaghetti or linguini
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2-3 teaspoons black pepper to taste, cracked
  • cups Parmesan Cheese finely grated, plus extra for serving

Instructions

  1. Cook the pasta in a large pot of salted water until al dente.
  2. In the meantime, melt together the butter and olive oil over low heat and add the pepper. Allow the pepper to toast in the butter/oil until fragrant.
  3. When the pasta is cooked, reserve 2 cups of water and drain. Toss the pasta into the pan with the butter and pepper and add the cheese and 1/2 cup of water. Toss and turn the pasta in the sauce until creamy, adding 1/2 cup of cooking water at a time to loosen the sauce and add more creaminess.
  4. Transfer to bowls then top with more cheese and serve.
