My simple and delicious blackened chicken brings bold Cajun flavors right to your kitchen with a crispy, smoky crust and juicy meat inside.

Ingredients
- 1 lb chicken breasts boneless, skinless
- 2 tbsp butter melted - optional (See Note 1)
- 2 tablespoons Cajun Blackening Seasoning
- 2 tablespoons olive oil

Instructions
- You can either dip the chicken in the butter and then the seasoning, or skip and use no butter, it's optional (See Note 1). Place chicken breasts in plastic bag. Add the Cajun Blackening seasoning, and using your hands, press to adhere to both sides of each chicken breast.
- In large skillet, heat oil over medium-high heat until shimmering. Keep area well ventilated.
- Place each chicken breast in pan closest to you and slowly lay in pan away from you. Cook, flipping once, until internal temperature reaches 160°F, about 5 minutes on each side.
- Remove to a cutting board and rest several minutes, temperature will continue to rise to 165°F. Slice on the bias and serve with side of choice.
Notes
- For my Cajun Blackened Steak (Filet Tips) I make sure they stay moist and not dry out by dipping them in melted butter first, then the seasoning blend to adhere. You can do this with the chicken as well, but seeing as the chicken is whole and the seasoning adheres well without, I don't typically use the butter. I also find it better so the blackened seasoning stays on and doesn't slip off. It is up to you.
