Cajun Chicken

Cajun Chicken features boneless, skinless chicken breasts brushed with melted butter and coated with a spice blend of Cajun seasoning, brown sugar, salt, and parsley. Baking at high heat yields juicy, tender chicken with a spiced crust, balancing savory and sweet notes. It's suitable for a simple, flavorful main course.

Description

This Cajun Chicken recipe uses four boneless, skinless chicken breasts brushed with melted butter before being seasoned with a homemade or store-bought Cajun spice mix combined with brown sugar and kosher salt. The dish is baked at 425°F for about 18-20 minutes until the chicken reaches an internal temperature of 165°F, then rested before slicing.

The brown sugar in the seasoning complements the spice and salt, creating a flavorful outer crust while keeping the chicken juicy inside. A sprinkle of fresh parsley adds mild herbal brightness at serving. The method avoids frying or grilling, providing an oven-baked preparation that is straightforward.

Serve this Cajun Chicken with sides such as rice, roasted vegetables, or a fresh salad. Resting the chicken after baking helps maintain moisture and improves slicing. Salt quantity should be adjusted depending on the Cajun seasoning's salt content.

Ingredients

Servings
  • 4 chicken breast 4-5 ounces each, boneless skinless
  • 3 butter melted
  • 1 1/2 tablespoons Cajun seasoning homemade or store bought
  • 1 1/2 teaspoons brown sugar
  • kosher salt to taste
  • 2 tablespoons parsley chopped
  • cooking spray

Instructions

  1. Preheat the oven to 425 degrees F. Coat a baking dish with cooking spray.
  2. Brush the butter all over both sides of the chicken.
  3. Place the Cajun seasoning, brown sugar and salt in a small bowl, and stir to combine. Check to see if your Cajun spice contains salt. If your seasoning does not contain salt, use 1 teaspoon of salt. If your seasoning does contain salt, just add 1/4 teaspoon more of salt.
  4. Rub the spice mixture all over both sides of the chicken breasts.
  5. Bake the chicken for 18-20 minutes or until a thermometer inserted into the thickest part of a chicken breast registers at least 165 degrees F.
  6. Sprinkle with parsley. Let the chicken rest for 5 minutes, then slice and serve.
