Ingredients

Servings

Cajun Seasoning

  • 1 1/2 tablespoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon thyme dried
  • 1 teaspoon oregano dried
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • salt to taste

Chicken and Rice

  • 2 tablespoons olive oil divided
  • 1 pound chicken breast cut into bite sized pieces, boneless, skinless
  • 1 tablespoon Cajun seasoning
  • 1/2 cup yellow onion diced
  • 1 red bell pepper diced
  • 1/2 teaspoon garlic grated or minced
  • 1 tablespoon Cajun seasoning
  • 1 cup jasmine rice or long grain white rice, uncooked
  • 2 cups chicken broth low sodium
  • scallions optional, for topping

Instructions

  1. Combine all of the ingredients for the cajun seasoning in a small bowl.
  2. Toss the cubed chicken in a tablespoon of the Cajun seasoning.
  3. Add a tablespoon of olive oil to a large pan with a lid over medium-high heat. Add the chicken to the pan and brown for a couple minutes. Don't cook the chicken all the way through, it will finish cooking with the rice. Remove the chicken from the pan and onto a plate.
  4. Add the remaining tablespoon of olive oil to the pan. Add in the onion and pepper and sauté until soft, about 4 minutes. Stir in the garlic and a tablespoon of the Cajun seasoning and cook for another 30 seconds.
  5. Stir in the rice and then pour in the chicken broth. Bring it to a simmer and then add the chicken back into the pan. Cover with a lid and cook on low heat for 15-20 minutes or until the rice is tender.
  6. Once the rice is tender turn of the heat and let it steam for another 5 minutes to absorb any excess liquid. Top with sliced scallions and serve.
