Cajun Chicken Salad with Avocado Ranch Dressing

Delicious summer veggies come together in this mouthwatering salad.  Topped with cajun chicken that adds a little bit of heat and creamy avocado ranch helps to cool it down.  This is one incredible salad!

Ingredients

  • 1 pound boneless skinless chicken breast
  • 1 tablespoon Cajun Seasoning
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, cut in half
  • 1 large cucumber, sliced
  • ¼ cup diced red onion, about ¼ an onion
  • ¼ cup crumbled Feta cheese

Avocado Ranch Dressing

  • 1 large ripe avocado
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ¼ cup buttermilk
  • 2 teaspoons distilled white vinegar
  • ½ teaspoon dried parsley
  • ¼ teaspoon dried dill
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • teaspoon salt

Instructions

  1. Season 1 pound boneless skinless chicken breast thoroughly with 1 tablespoon cajun seasoning. Cook the chicken on the grill or in a skillet over medium heat for about 5 minutes on either side, until cooked through and you reach an internal temperature of 165 degrees Fahrenheit. Chop the chicken into bite-sized pieces.
  2. Combine 4 cups chopped romaine lettuce, 1 cup cherry tomatoes, 1 large cucumber,¼ cup diced red onion, and chopped chicken in a large bowl. Toss until combined. Top with the ¼ cup crumbled feta cheese.

Avocado Ranch Dressing

  1. Combine 1 large ripe avocado, ¼ cup mayonnaise, ¼ cup sour cream, ¼ cup buttermilk, 2 teaspoons distilled white vinegar, ½ teaspoon dried parsley, ¼ teaspoon dried dill, ¼ teaspoon dried dill, ¼ teaspoon garlic powder, and ⅛ teaspoon salt in a food processor or blender. Pulse until smooth and creamy. Pour over the salad before serving.
