Cajun Fries
Description
This recipe offers two options for Cajun Fries: cutting and soaking fresh potatoes or using frozen fries. Fresh potatoes are sliced uniformly, soaked in cold water with white vinegar to remove excess starch and improve crispiness, then dried and tossed in cooking oil before baking on hot trays. The fries bake first at a moderate temperature, then at a higher heat to finish crisping. Frozen fries can be prepared similarly but require adjusting time and temperature according to package instructions.
The fries are finished by tossing with a Cajun seasoning blend that provides warmth and complexity. The seasoning is adjustable to taste. Popular potato varieties suitable for frying include Yukon Gold, Russet, Sebago, and Desiree. Vegetable oil is the default fat used, but alternatives like olive, canola, sunflower, or coconut oil can be substituted.
This versatile recipe can serve as a side for meals or a standalone snack. Using vinegar in the soak phase enhances texture, and note that the seasoning blend can either be store-bought or homemade for a customized flavor profile.
