Cajun Pasta Salad

Cajun Jambalaya Pasta full of New Orlean's flavor!

Ingredients

Servings
  • 12 ounces rotini pasta or your favorite
  • ½ cup mayonnaise or plain Greek yogurt
  • 2 tablespoons Creole mustard
  • 1 teaspoon creole seasoning
  • 4 egg chopped, hard-boiled
  • ½ bell pepper diced
  • 2 talks celery finely chopped
  • ¼ cup red onion chopped

Instructions

  1. Cook pasta according to package directions. Once ready, drain and set aside.
  2. In a large bowl, combine the mayonnaise, Creole mustard, and Creole seasoning. Add the pasta back into the bowl, the hard-boiled eggs, bell peppers, celery, and red onion. Toss to coat everything with the creamy dressing. 
  3. Refrigerate to chill for one hour and serve cold.

Notes

  • Use Grey Poupon mustard if you don't have Creole or yellow mustard in a pinch.
