Cajun Potatoes

You'll love these Cajun Potatoes as they are packed with flavor. They are easy to make and are the perfect side for many meals. Serve them alongside grilled chicken, steak, or fish. Add them to your plate after you grill a burger, or serve them next to a big plate of ribs. The potatoes are boiled until tender, tossed in cajun seasonings, and then roasted to give you a light crunch full of flavor.

Ingredients

  • 1 teaspoon salt
  • 1.5 lb baby potatoes , whole (see note 1)
  • 3 tablespoon olive oil
  • tablespoon Cajun Seasoning see note 2

Instructions

  1. Preheat the oven to 390ºF/200ºC.
  2. Bring a pan of water to a boil. Add the salt.1 tsp salt
  3. Leave the potatoes whole and boiling for 15 minutes or until just tender.1.5 lb / 680 g baby potatoes
  4. Drain immediately and allow the potatoes to steam dry in the strainer.
  5. Place the potatoes into a small roasting dish, pour over the oil, and roll them about to coat.3 tbsp olive oil
  6. Sprinkle over the cajun seasoning and then roll the dish to ensure each potato has a seasoned coat.3 tbsp olive oil
  7. Roast for 15 minutes until slightly crisp and crunchy.

Notes

  • You want to use small potatoes that can be cooked whole. You can buy Baby Gold Potatoes, Baby Red Potatoes, Baby Salad potatoes, or Gemstone Potatoes.
  • I use my homemade Cajun seasoning, but you can use your favorite store-bought brand.
