Cajun Potatoes

Cajun Potatoes are small whole baby potatoes boiled until just tender, then coated in olive oil and a bold Cajun seasoning before roasting to develop a crispy and flavorful exterior. This method yields tender interiors with a spicy, seasoned crust that makes for a satisfying side or snack.

Description

This recipe begins by boiling whole baby potatoes in salted water until they reach a just tender stage, which helps to accelerate the roasting process and ensures a soft interior. After draining, the potatoes steam dry to remove surface moisture, which promotes crispness during roasting.

The potatoes are then tossed in olive oil and an ample dose of Cajun seasoning, ensuring every piece is well coated with the vibrant spice blend. Roasting at 390ºF (200ºC) for about 15 minutes crisps the potatoes’ skins slightly while maintaining a tender inside. The seasoning provides a smoky, spicy, and aromatic flavor profile typical of Cajun cuisine.

Use small baby potatoes such as Baby Gold, Baby Red, or Gemstone varieties to ensure even cooking. This recipe can be tailored with homemade or store-bought Cajun seasoning, depending on desired flavor intensity.
