Cajun Shrimp Pasta

My Cajun shrimp pasta features an absolutely decadent garlic sauce that coats the succulent, plump seafood and al dente pasta like a dream!

Ingredients

  • 8 oz penne pasta or spaghetti
  • 2 tbsp olive oil
  • 1 lb Shrimp peeled and deveined or cooked, medium
  • 1 tbsp Cajun seasoning or Cajun Seasoning of choice, seafood seasoning
  • 2 tbsp butter
  • 1 celery diced, rib
  • 3 cloves garlic minced
  • 14 oz fire roasted tomatoes drained
  • 1 1/2 cups heavy cream
  • 1/2 cup Parmesan Cheese grated
  • 1/8 tsp red pepper flakes
  • 2 tbsp parsley for garnish

Instructions

  1. Drain and rough chop the roasted tomatoes. You will need 1 cup for this recipe. Save reserved for another recipe.
  2. Cook the pasta in a pot of heavily salted water until al dente according to package instructions. Reserve 1/2 cup pasta water. Drain remaining water, toss pasta with 1 tablespoon olive oil and cover to keep warm.
  3. Toss the shrimp with the cajun seasoning. In a deep skillet, heat 1 tablespoon olive oil over medium heat. Once hot, add the seasoned shrimp in a single layer and saute for about 1-2 minutes per side, or until the shrimp is pink, remove from skillet and cover to keep warm. If using cooked shrimp do the same, but cook 30 seconds on each side.
  4. In the same skillet, melt butter over medium heat. Add the celery and garlic and cook 30 seconds until fragrant. Add the diced tomatoes and saute for 3 minutes.
  5. Add the heavy cream, grated parmesan cheese and pinch of red pepper flakes. Bring to a boil then turn heat to medium/low and cook 2-3 minutes until the sauce thickens. Season to taste.
  6. Add the shrimp, pasta and reserved pasta water to the sauce and stir until pasta and shrimp are coated in sauce and heated through. Garnish with parsley before serving.
