For Cajun Shrimp

  • 1 pound Shrimp shells removed, large
  • 1 tablespoon butter
  • 2 tablespoon Cajun seasoning or to taste
  • lemon juice from half

For Mango Salsa

  • 1 Mango peeled and chopped
  • 1 cup cherry tomato chopped
  • lime juice from 1
  • 4 green onions chopped
  • 1 jalapeño seeded and chopped
  • ½ cup cilantro chopped
  • salt to taste
  • black pepper to taste

For Tacos

  • 8 corn tortilla 6 inch
  • 1 cup coleslaw mix

Instructions

  1. To prepare the salsa toss all the mango salsa ingredients in a bowl and set aside until ready to assemble tacos.
  2. In a large skillet melt the butter on high heat. Season shrimp with cajun seasoning and add shrimp to skillet. Cook until pink, shouldn't take more than a couple minutes. Turn off heat and squeeze half a lemon over the shrimp.
  3. To assemble tacos, start with coleslaw mix, shrimp then salsa.

Notes

  • Store leftover shrimp and mango salsa separately in airtight containers in the refrigerator.
  • Leftover shrimp is good for 3-4 days if kept properly chilled.
  • Mango salsa should be consumed within 3 days for freshness, kept tightly covered.
