Cajun Shrimp Tacos with Mango Salsa
Description
This recipe features large shrimp coated with Cajun seasoning and cooked briefly in butter for a slightly spicy, buttery flavor. The accompanying mango salsa balances heat with sweetness using mango, tomato, jalapeño, green onions, and cilantro, all brightened by lime juice. Corn tortillas are warmed and layered first with coleslaw mix providing crunch, then the shrimp, and finally topped with the fresh salsa.
The quick cooking time on high heat ensures shrimp are tender and juicy without becoming rubbery. The combination of savory Cajun spices and cool mango salsa makes these tacos distinctive and refreshing. They work well as a casual lunch, light dinner, or festive gathering dish.
Store leftover shrimp and salsa separately in airtight containers in the refrigerator. Shrimp will keep 3-4 days while salsa remains fresh for about 3 days. Keeping them separate prevents sogginess when reheating or serving again.
