Cake Mix Chocolate Chip Cookies
Description
This recipe simplifies cookie baking by substituting flour and sugar with a white or yellow cake mix base. The addition of vegetable oil and eggs binds the dough while keeping the cookies tender. Chocolate chips add sweetness and texture contrast.
The cookies are dropped in rounded spoonfuls onto parchment or silicone mats and baked at 350 degrees Fahrenheit for a short time, just until edges are set while the center remains soft. After removing from the oven, cookies rest on the baking sheet briefly to finish setting before cooling completely on racks.
These cookies have a soft, cakey texture rather than crispness, with pleasant pockets of melted chocolate chips. They are suitable for those who prefer a softer cookie or a quick baking method using a cake mix foundation.
Using parchment or silicone mats ensures cookies won't spread too thin and eases cleanup. A cookie scoop helps maintain uniform size for even baking. Optionally sprinkling coarse sea salt during cooling adds a balance to the sweetness.
Ingredients
- 1 white cake mix or yellow, 15.25 oz box
- 1/2 cup vegetable oil
- 2 egg
- 1 cup chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Combine cake mix, oil, and eggs together in a large bowl, mixing by hand with a whisk until smooth. Stir in the chocolate chips.
- Drop dough by rounded tablespoons onto cookie sheets lined with parchment paper or silicone baking mats. Bake in the preheated oven for 9-11 minutes. Cookies won't look completely baked, but that's ok! Remove from oven and allow cookies to cool on the cookie sheet for 1-2 more additional minutes before transferring to a wire rack to cool completely.
- Store in an airtight container. Enjoy!
Notes
- Line baking sheets with parchment paper or silicone mats to prevent spreading and ease cleanup.
- Use a cookie scoop for uniform cookie size and even baking.
- Optionally sprinkle coarse sea salt on cookies just after baking for a sweet and salty flavor contrast.
- For crunchier texture, bake an additional 1–2 minutes, watching carefully to avoid burning.
- Store cookies in an airtight container at room temperature to maintain freshness for up to four days.
